Low Carb Coffee Ice Cream


Are you a coffee fanatic?  I will admit that I enjoy my coffee. However, it is over 90 degrees here and I'm really not into hot beverages much after my morning java jolt.

I have made cold brew coffee and I like it, but I don't always have it on hand. Thinking about cold brew my mind wandered on to ice cream.  Don't ask how, it just did and as a result I have made a killer coffee ice cream...and yes, it is low carb friendly.  The chocolate covered coffee beans I added drove up the carb count and  I have included the nutritional info from My Fitness Pal and the end of the post with and without the chocolate covered coffee beans, so you can decide which version you want to dive into.

This recipe takes just a wee bit of preparation because you need to coarsely grind your coffee, as though you were making french press, then mix it into your cream mixture and let it steep overnight in the fridge.  The little bit of prep is worth it in the rich coffee flavor you'll have in your ice cream!




Low Carb Coffee Ice Cream

Serves 12


Ingredients:


2 1/2 cups heavy whipping cream
1 cup unsweetened almond milk
1 cup coarsely ground coffee (I used Roasterie City of Fountains)
1/2 cup erythritol (or Swerve)
4 large eggs
3 Tablespoons of espresso vodka (I used Roasterie Dizzy Three)
2 Tablespoons vegetable glycerin (optional)
1/4 teaspoon xanthan gum
1/4 teaspoon liquid stevia extract
1 cup chopped chocolate covered coffee beans


Directions:


24 hours prior to mixing and freezing the ice cream, grind your coffee and mix it into the cream and unsweetened almond milk. Cover the container and refrigerate overnight.  The coffee will infuse into the cream and turn into a light tan color.






This is after steeping in the fridge overnight

When ready to make the ice cream, remove the cream mixture from the refrigerator and strain it to remove the coffee grounds.  Don't worry if there are teensy-tiny bits, that's okay.  Make sure you press the grounds to get as much of the cream mixture out as possible.

In a separate bowl, combine the eggs and erythritol and beat on high speed until thick and creamy and the sweetener dissolves.  Add the cream mixture to the egg mixture along with the espresso vodka, vegetable glycerin, xanthan gum and liquid stevia.  Beat an additional 2-3 minutes to thoroughly combine the ingredients.

Pour the mixture into the canister of your ice cream maker and freeze for approximately 40 minutes.  When the mixture is the consistency of soft serve, add the chopped chocolate covered coffee beans and continue to churn until they are combined.  If your ice cream canister is too full to do this, just layer in them in when you put the ice cream into your air tight freezer container.



Serve immediately or scoop into your freezer container for enjoying later.

Yield 12  1/2 cup servings.

Low Carb Cinnamon Bourbon Pecan Ice Cream



I've been on a roll making ice cream as summer time rapidly approaches.  After making the Mint Chip, I barely had it in the freezer before I was dreaming up the next  flavor combination. 

My thoughts really went down the path of Fireball with toasted pecans, but Fireball has too much sugar for low carb, so I went with straight bourbon and added a healthy dose of cinnamon to it. Bourbon will help reduce the iciness of the finished product and adds just a little flavor.   Be sure to toast the pecans, it adds a flavor depth to the ice cream.

I already have the next batch in mind but that will need to wait until I reduce the quantity of low carb ice creams I have in the freezer right now!  In the meantime, enjoy this one!

I would be remiss to not credit Carolyn Ketchum at All Day I Dream About Food for her recipe which inspired the base for my ice creams.  She's probably has no clue as to the monster she's created!

Low Carb Mint Chocolate Chip Ice Cream


Ice Cream, we all love it.  We have our favorite flavors as well.  I was wanting some mint chip ice cream not long ago and while working on the recipe, I had, well, let's say an accident measuring out the mint extract and suffice it to say, my breath was minty fresh after eating a bowl.  No chance of throwing it out, nope, not when it was edible.

I've seen a lot of posts on Facebook regarding some commercially available low carb ice creams.  I've tried them and honestly, I like making my own.  Yes it takes more work, but not much and  I know exactly what is in it.

My second attempt of this ice cream was today.  This time, being careful with measurements!
I am happy with the results and excited to share it with you.

Low Carb Snickerdoodle Ice Cream



This recipe is an updated makeover of one I posted back in 2011.  Since that time I've shifted to a low carb way of eating to help lose a few pounds and yet satisfy my sweet tooth now and then.

I've also learned some new techniques since that time that will make this ice cream easier to make for beginners, since it doesn't require tempering the eggs.

Before you get started you will need to make a batch of Low Carb Snickerdoodle Cookies.

Snickerdoodle Ice Cream

















                                           

                

Snickerdoodle Ice Cream


Ingredients:


2 cups whole milk
3/4 cup sugar
3 large eggs
2 cups heavy cream
2 teaspoons vanilla
2 teaspoons cinnamon
1 1/2 cups chopped homemade Snickerdoodle cookies

Directions:


Combine the milk, sugar, eggs, vanilla, and cinnamon into a blender and blend until smooth.
Pour the blended mixture into a heavy saucepan, add the heavy cream and heat the mixture over medium heat. Whisk constantly until the mixture thickens and your finger leaves a track on the back of a wooden spoon coated with the custard mixture. Remove the pan from the heat.

Strain the custard mixture into a storage container to remove any cooked egg bits. Cover the mixture with plastic wrap to prevent a skin from forming and refrigerate for several hours or overnight.

When the mixture is thoroughly chilled you are ready to make the ice cream. Pour the chilled custard into an ice cream maker and freeze according to the manufacturer's instructions. When the ice cream is almost done (looks like soft serve), add the chopped cookies.

Remove the ice cream from the freezer and place it in an airtight container and freeze for a couple of hours to firm up.

Serve a couple of dips in a pretty  dish and garnish with a couple of cookie wedges and whipped cream.

Frozen Red Velvet Cheesecake Ice Cream Brownie


Frozen Red Velvet Cheesecake Ice Cream Brownie

Red Velvet Brownie

Ingredients:

1 (4 ounce) bittersweet chocolate baking bar, chopped
3/4 cup butter
2 cups sugar
4 large eggs
1 1/2 cups all-purpose flour
1 (3 ounce) bottle of liquid red food coloring
1 1/2 teaspoons baking powder
1 teaspoon vanilla extract
1/8 teaspoon salt

Instructions:

Preheat oven to 350 degrees F.
Line the bottom and sides of a 9x9 pan with aluminum foil, allowing 2-3 inches to extend over sides.
Spray the foil with non-stick spray.

Coarsely chop chocolate and butter.

Premium Ingredients Make the Difference
Place in a large microwave proof bowl and microwave on HIGH 1 1/2 to 2 minutes, or until melted and smooth, stirring every 30 seconds or so. 


Whisk in sugar, followed by the eggs, adding one egg at a time, whisking until well blended after each addition.
Whisk in the red food coloring and vanilla until blended.
Gently stir in flour, salt and baking powder.


Pour mixture into the prepared pan.
Bake for 45 minutes or until a wooden pick inserted in the center comes out with only a few moist crumbs.
Cool completely on a wire rack.



When the brownie is cool, mix up the Cheesecake Ice Cream  

Cheesecake Ice Cream
(fat free version)

Ingredients: 

2 package (8oz) of fat-free cream cheese
2 cup fat-free sour cream
1 cup fat-free half-and-half
1 1/3 cups granulated sugar
Zest of 2 lemons


Instructions:

Cut cream cheese into small cubes. Add to blender or food processor, along with sour cream, half-and-half, sugar, lemon zest, and salt. Puree until smooth. 


Chill mixture thoroughly in refrigerator, then freeze in ice cream maker according to manufacturer’s directions.

When the ice cream is frozen it's time for assembly.

Line the bottom of a bread pan with aluminum foil, leaving an overhang on each side..

Using the foil, lift the brownie from the pan.
Place on a cutting board and cut the brownie in half.
Take one half and place it in the bottom of the lined bread pan, trimming as necessary to fit (I just squished mine in there).

Next layer in the ice cream.  Use all but about two cups of the ice cream for this.

Top with the remaining half of the brownie.  Don't worry, it will sit above the pan.
Fold over the foil overlaps, then cover with foil and place in the freezer.

To serve, unmold from the bread an, unwrap and slice into 1/2 servings.  Garnish with a little whipped cream.
